Walnut kernel consists: protein, fatty oil, carbohydrates, vitamins A, C, B1, B2, B12, K, E, PP, cellulose, iron, cobalt and tannin, ascorbic acid, thiamine and rutin.

Walnut kernel can be used in its natural view (it is an important usage because of popularity of health living, health food systems and natural food) and in parts:

  • as a seasoning for meat;
  • frequently - as a substitute for meat;
  • as an ingredient for sauces;
  • as a part of halva;
  • for bakery (cakes, pies, cookies);
  • as an additive to ice-cream;
  • for salades;
  • as a raw material for jam.

Walnut kernel is also used in medicine: for the prevention and treatment of atherosclerosis, for lowering blood cholesterol level, during vitamin deficiency and lack of iron in the body, while anemia, or in the case of insufficient lactation.
